I can't wait
I am writing this from an airplane somewhere between Seattle and Newark, en route to my in-law’s house for Thanksgiving. I’m afraid I don’t have a recipe for you today, but the view is very nice, and I can offer you that, at least. If you squint hard enough, the wing of the plane looks a little like a dolphin tail, so it’s really two pictures in one. I hope you will find it a fair exchange.

Or, if not, I can offer a little piece of news instead. Actually, it’s a huge piece of news, but calling it little makes it feel more manageable. Brandon is opening a restaurant.
My heart stopped for a second, just typing that.
When I met him about 3 ½ years ago, Brandon was a graduate student in music composition. Actually, if we’re getting down to the nitty-gritties, he was a graduate student in music composition until last March, when he went on leave to focus on the restaurant full-time. It may seem like a strange transition to make, but he has been working in restaurants since he was a teenager, and cooking isn’t all that different, conceptually, from writing music. The work itself is certainly not the same, but both are creative processes, ways of taking separate elements and arranging them, balancing and tweaking, to make something new. Anyway, those of us who know him – which, in a sense, includes all of you – know that he loves food. The man can run circles around me in the kitchen. I like to cook, yes, but he is a cook.

He is also obsessed with pizza. As a grade-schooler, he used to go to a pizzeria near his parents’ house in New Jersey and pepper the owner with questions about dough and mozzarella. When I met him, he lived on the Upper West Side, but he trekked out to the middle of Brooklyn at least once a week to wait patiently in line at DiFara. Last year, he agreed to drive a car from San Antonio to Los Angeles just so he could try the pizza at Mozza, and he took an overnight trip to Phoenix for the sole purpose of eating at Pizzeria Bianco. So when he told me that he wanted to make pizza, it didn’t exactly surprise me. It may have scared me a little, but it didn’t surprise me.

The wheels have been in motion for quite a while – over a year, I think – but he signed a lease on Friday, so we feel ready now to say something here. We wanted to go ahead and share it with you, because we’re excited. And also, you know, a little scared, which seems only sane. But mainly, we’re excited. I hesitate to say too much today, but I can tell you that the restaurant will be here in Seattle, in our neighborhood. The windows are covered with plastic right now, and the door is kind of garish and wonky, but it’ll be prettier soon, I promise. If you squint hard enough, you might get a sense of it. Or see a dolphin tail. You never know.

I say that the restaurant is Brandon’s, because it is: it’s his baby, his vision, his sweat. But I will be there too, helping where I can, and the menu, which I can’t wait to show you, is a real combination of his style and mine. It is inspired by two of our favorite restaurants: Zuni Café, in San Francisco, and Boat Street Café and Kitchen, where Brandon has worked for the past two and a half years, since he moved to Seattle. It happens, yes, that the emphasis will be on pizza, but there will also be wood-fired vegetables from local farmers, seasonal salads, charcuterie, and rustic desserts, the kind I like to make at home. I can’t wait.
There is a lot of work ahead, no doubt, but he plans to open in the springtime. Hopefully early spring, though we’ll see. My book comes out on March 3, so our heads are sort of exploding at the moment. But don’t worry! We have a lot of help. Susan Kaplan of Boat Street has been a hugely generous mentor, and our friend Carla Leonardi of Café Lago has spent hours with us at the oven and in the kitchen. And my brother David, who owns five(!) restaurants in the DC area, calls to check in and field questions and cheer, which makes me so happy that I feel kind of weepy right now.
I know there are a lot of details missing from this story, but I will tell you more as I can. In the meantime, thank you, always, for being here, and for believing in me, in him, and in us. I’ll see you back here on December 8, once we’ve had time to take some deep breaths, sleep in, cook Thanksgiving dinner, wander around New York and eat pizza, and get ready for what comes next.

Oh my GOSH! Molly, what fantastic news! I've never left you a comment before, (I've lurked here for a few months; I've never really felt compelled to comment before because I'm what my loved ones teasingly call "domestically disabled" and though I've experimented in the kitchen before, I haven't had the nerve to try any of your dreamy recipes - yet!) so what better time to start than now?
Really, that's incredible. I can tell from what you've written about Brendan that he's passionate about food in a way that I can't describe without using the word "talent." I think that fits you both - the two of you have a talent for cooking, creating, and somehow even nurturing ingredients so they become more than mere sustinence or fuel. You manage to concoct something special out of simple, lovely elements in a way that's effortless; its never portentous or alienating to the average cook. Rather, you inspire people with a variety of culinary experience to better their dishes with a few key tricks and lots of respect and appreciation for the sum of their parts. Its no wonder than your husband has taken a page from his wife's book (Haha, soon that will be almost literal! March 3rd is just around the corner!).
I know this must seem scary, but look at it as a new adventure - the two of you are going to have some challenges, obviously, but I have a feeling you're onto something brilliant!

I don't often comment, Molly, but I'm a regular reader for sure. Congratulations and good luck! This is so exciting, and yes, scary. It's going to be great, though, I just know it.
You're probably not going to check comments while you're in NY, but if you do, you might want to trek over to a restaurant called Brio on 61st Street right off Lexington. It isn't the best pizza in the world, but it is really, really, really good. They have a wood-burning fireplace, make delicious salads, sauteed artichoke hearts all smokey and delicious, and Italian bistro dishes. It's usually packed - often with Italian tourists since it's obviously in Italian guides to NYC. I think it is a great example of what an Italian pizza/bistro can be rather than just a pizza joint. Two of us usually share the margarita pie and a spinach salad. I drink white wine; Walter drinks red wine. Might be interesting for you to see. It's a consistently good neighborhood place.

I love the place- it looks like the perfect spot for Brandon's pizzeria. I only wish I could fly across the country to eat there in the spring. If I had a bigger pizza budget,I would. I, too, am a dedicated pizza hunter. The pizza here in NC leaves something to be desired.

Not only because it brings me hope and joy to see not one but TWO lovely people follow their dreams and work toward them and see them to fruition (and there's that leaving grad school bit). Not only because Brandon is a whiz at finding great stuff and packing it up (and thank you again for that). Not only because I know how hard Brandon has worked on this (and you too, Molly). Not only because it means Jack will get more pizza crust (I had to get Jack in here somehow). But because I love the two of you more than you know, and I am so proud and excited and thrilled about all of this.

Delurking here -- Wow, congratulations! I'm a huge fan of rustic neapolitan style pizza (who isn't), and just looking at your photos in this entry got my stomach rumbling.
If you haven't already, I'd highly, highly recommend a visit to Franny's on Flatbush Ave. in Brooklyn while you're in New York. Based on what you've said about Brandon's restaurant, I think you'd really like it.

Fantastic! Seattle needs more good pizza. We are lucky to live around the corner from Tutta Bella, but other than that and a few other places, there definitely is a dearth. I do believe we are looking at 70th St NW - 1400 block? Google Street view shows the orange door. Orange door for Orangette! So, soon a full on food destination street with a few restaurants and a bakery, and almost around the corner from Lunchbox Lab too! Those Ballard High kids are way too lucky. And Columbia City is 30 full minutes away.

Molly, found your site by accident 12 months ago and fell in love with you both .. ok Jack stole my heart!!! But the wood burning pizza oven you borrowered from a friend topped the charts! My husband and I have been on a search for awesome pizza. We ate at Pizzeria Bianco in Arizona last May after reading many books on pizza. Our family ordered all 6 pies... we could hardly speak while we tasted the pizza and hope the best for you guys!! Also we celebrated our 25th wedding anniversary at Cafe Lago at your suggestion! Thank you! First thing on my Christmas list is your book due out! Kimberly and John, Edmonds...also you inspired me to make homemade jam from all our blueberry bushes.
I guess this means my boyfriend and I will be making a roadtrip to Seattle soon? We've been meaning to go up there to go to our friend's new restaurant, too.
By the way, I too went all the way to Los Angeles to try to the pizza at Mozza--well worth the trip, too! II'm still drooling over the fennel-sausage pizza and the bread-crumb crusted brussel sprout gratin...mmmm!

My entrepreneurial spirit was sparked by a new restaurant discovery over here this weekend. It's called Lasoupe. They are open just for lunch and serve only soup. Yummy, delicious soup, with a little bread on the side and a cappuccino or tea if you want it. 10 choices, 2 sizes. The wheels are turning; I wonder if such a concept would fly in my hometown?

By now I'm just one in the chorus, but man! Such apt timing for such a secret to be divulged. Best of luck and since people are all telling you where you Have To Eat your pizza in New York, I have one to add to the pile. My boyfriend eats pizza here, at Una Pizza Napoletana every year after the Five Boroughs bike tour of NYC with a crowd of healthy eaters (some with big bellies) from Philadelphia, one pie to a person...you get the idea. I've spent the bulk of our relationship just hearing about this place. I have a feeling it might prove an asset to your research.

Having read Orangette for hmmm, years now, I can say without actually knowing you guys at all that a restaurant sounds like a perfect undertaking, something you and Brandon will be great at. I wish I lived on your coast and could come for a meal when it opens. sigh. maybe someday.
that is so freakin awesome! i cannot wait to visit. thin-crust pizza is one of my favorite foods in the world. I grew up just outside of New Haven, CT. My husband and I now live in socal and made a roadtrip this summer that began in LA just so we could eat at Mozza. Then we drove up to San Fran where we ate more delicious food including a fabulous dinner at Zuni. If you and your husband ever find yourself on the East Coast in New Haven, CT, you must try out a pizza/brewery called Bar. My favorite pizza is the the white clam, but their specialty is mashed potato and bacon. Sounds odd, I know, but it is delicious. The pizzas come out of the oven in about five minutes. So good!

Congratulations, and best of luck with the restaurant... and while I realize that financially, this is probably a poor time to add to the list of locations to try the pizza in... after a trip this summer I feel I need to let the pair of you know that you really must try the pizza in Slovenia... both Dvor in Ljubljana and "the pizza place around the lake, all the locals go there" in the small town of Bohinj make exquisite pies, and have utterly ruined Canadian pizza for me. As a bonus, if you do eventually, make the trip, the scenery and people are lovely, and between Slovenia and Croatia, there's more than enough material for a few weeks of eating very well.
Well, if his pizza is anything like Carla's, I hope your neighborhood is near mine. Will he do some cheeseless varieties? Congratulations.

Congratulations. Sounds exciting. I have exactly the same dream as Brandon and hope some day for it to happen. I go to Italy all the time and my friend Anna from La Vecchia Quercia uses her wood burning oven to make everything from roasted vegetables to cakes.
They do a vegetarin antipasta of roasted vegetables that is amazing.
